Crackle Pop Cookie Sandwich

Am I the only childish one who finds popping candy a wonderful fun nostalgia?
The little tingles on the tip of your tongue, the deep crackles & fizzes at the back of your throat. Everyone innocently opening their mouths in (lets face it) a disgusting, humorous way - tongue out, mouth wide - "waaait, argh can you hear...can you hear it, ahh, now, ahhh?" 
I baked these after being tasked with pudding duty for a family dinner.
I wanted something easy, a little fun (for the smalls) and something to marvel over for the adults.  

You'll need: 
200g plain flour 
1 large egg
75g light muscovado sugar 
75g caster sugar
150g butter, softened
2tbsp vanilla extract
1/2 tbsp bicarbonate soda
180g popping candy chocolate chunks 

For the sauce (for 1): 
150g popping candy chocolate
2tbsp milk


Cream together the butter & sugars.


Add the vanilla and beat in the egg. 

Sieve in the dry ingredients. 
That's your flour, bio soda & a pinch of salt.


Mix together & stir in the chunks of candy chocolate.



Poke all the chunks inside the dough (protecting them as much as possible from the heat) & roll into balls. Place on a baking sheet.


Bake for 15 minutes. Leave to cool. 
Maybeee eat one warm, make sure they aren't poisonous, you know. 


Melt the chocolate in a bain-marie. 

Add the milk and stir. Add a dash of boiling of water, this will make it nice & shiny. 

Pour the chocolate onto one cookie's bottom (you could add ice cream here, if you were really wild) 
Sandwich together & serve. 
Sit round a table with open, fizzy mouths, full of cookie & chocolate.

  2. Oh my heck these look amazing! Those chocolate bars are my favourite at the moment. One time I ate on in a meeting. Bad idea. I'm going to have to try these out xxx
